Welcome to "You Are What You Eat Eats." Let me first explain the title. Perhaps you have heard the expression, "you are what you eat." Well I'm here to inform you we are much more than just what we eat. We are physically and emotionally driven by the WAY in which we DIGEST what we eat. And that is essential to understanding how we eat - with a little help from our friends. We are complex organisms built of many interconnected systems and hosts to a myriad of helpers that live among us, invisible but powerful and essential to life. The main component in this system of helpers that I have been studying is the community of gut flora that break down our food and help digest all the different things we consume. Since birth we have been cultivating life within our bodies. These probiotics come in all shapes and sizes and many are available in capsules from your local health food store. But the best are those that live within traditional fermented foods from around the world. You might be surprised to find many of the staples of our diets are in fact traditionly fermented. It has been our bad habit as humans to speed up these processes of feementation and aging in our time of fast food and modern convenience. For example, breads which traditionally were made from slow rising sourdough starts are produced with fast rising packaged yeasts and preservatives are added to make it last longer on the shelf... it's no wonder we are experiencing more digestive disorders and helath problems related to food than ever in our history!! I believe we are becoming more aware of the importance of these foods in our everyday diet, and by being more connected to our own nature and culture we become more healthy and happy human beings. The purpose of this blog is to keep a record of the foods I eat on an everyday basis, and to track the health and happiness of my body and gut. I am waking up to my own instinctual understanding of how to eat and how to survive in this world. Wish me luck!
